Cottage Cheese Pancakes

1 cup low-fat cottage cheese
2 large eggs
½ cup rolled oats (or oat flour)
1 tsp baking powder
½ tsp cinnamon (optional)
1 tsp vanilla extract
Pinch of salt
1–2 tsp olive oil or coconut oil for cooking
Optional add-ins:
1 scoop vanilla protein powder (for extra protein boost)
1 tbsp chia seeds or ground flaxseed (adds fiber + omega-3s)
¼ cup mashed banana or unsweetened applesauce (natural sweetness)
Instructies
Blend: Add all ingredients to a blender and blend until smooth. Let the batter rest for 5 minutes to thicken slightly.
Cook: Heat oil in a nonstick pan over medium heat. Pour small rounds of batter (about ¼ cup each).
Flip: Cook 2–3 minutes per side until golden brown and set.
Serve: Top with Greek yoghurt, berries, or nut butter for extra protein and healthy fats.
