Easy Sheet Pan Chicken Fajitas

Ingrediënten

1½ lbs. boneless skinless chicken thighs, cut into strips

1 Tbsp olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

1 onion, sliced (white, yellow or red)

2 garlic cloves, minced

1 lime

¼ cup cilantro, chopped

Flour tortillas, for serving

1 Tbsp chile powder

1½ tsp smoked paprika

1 tsp cumin

1 tsp salt

½ tsp garlic powder

½ tsp onion powder

½ tsp dried oregano

¼ tsp black pepper

Instructies

Preheat the oven. Preheat the oven to 425 degrees and pull out a large rimmed baking pan.

Combine the spices. Mix the fajita seasoning ingredients together in a small bowl. Set it aside.

Toss. Add the chicken, bell peppers, onion and garlic to a large bowl. Add the olive oil and seasoning mix and toss until everything is evenly coated. (I'll usually place the chicken on top & try to coat it in more of the spice mix.)(Alternatively you can mix everything together on the baking pan.)

Bake. Arrange the chicken/pepper mixture on the baking pan. Bake for 15-20 minutes or until the chicken is cooked through and the veggies are tender.(Optional: Once done, turn the oven to broil and broil for a few minutes to get a little char.)

Garnish & serve. Remove the pan from the oven, squeeze lime over the top and garnish with cilantro. Serve with your favorite toppings and enjoy!
