Stacked Chipotle Potatoes

Ingrediënten

4 yellow potatoes

Olive oil

Garlic powder

Smoked paprika

Cumin

Chili powder

Salt

1 cup shredded vegan (or regular) parmesan

Nonstick oil spray

(Optional) chipotle mayo and chives for topping

Instructies

Set oven to 400F. Peel the potatoes and then thinly slice using a mandolin or knife.

Transfer potatoes to a bowl and then add in the olive oil and seasonings and mix until all the potatoes are fully coated.

Shred parmesan.

Spray a large muffin tin with nonstick oil and then a spoonful of parmesan to each "muffin".

Depending on the size of your slices, add about 10-12 potatoes stacked on top of each other to each spoonful of parmesan.

Top each stack of potatoes with another spoonful of parmesan and bake for 45 minutes.

After 45 minutes, broil the potatoes for 2 minutes.

Top each potato stack with chipotle mayo, chopped chives, and enjoy!
