Healthy Salmon and Rice Dinner in 20 Minutes

Ingrediënten

1 lb fresh salmon

1 1/2 cups water

1 cup uncooked white rice, rinsed

1/2 cup shredded carrot

1 bell pepper, large diced

1 sweet onion, large diced

8 oz. sliced mushrooms

1 tbs minced garlic

1 tsp smoked paprika

1/2 tsp lemon pepper

1/2 tsp dried parsley

1/2 tsp onion powder

1/2 tsp garlic powder

1/4 tsp salt

1/4 tsp pepper

juice of 1 lemon

olive oil for cooking

Instructies

add the rice and water to a pot or rice cooker, cover, and cook on low until light and fluffy

place the salmon on a parchment-covered baking sheet

spray with oil and season with lemon pepper, 1/2 tsp smoked paprika, and dried parsley

bake in the oven at 375F for 17 min

heat a large pan, add 1 tsp olive oil, and sauté the peppers, onions, and mushrooms for 5 min

add in minced garlic, salt, pepper, onion powder, garlic powder, 1/2 tsp paprika, and shredded carrot; cook for another 2-3 min

build the bowls and squeeze fresh lemon juice on top
