Ginger Sesame Pasta Salad

Ingrediënten

400g (14 oz.) protein pasta of your choice

2 blocks extra firm tofu or other protein of choice

2 medium-sized bell peppers, thinly sliced

half of a red onion, thinly sliced

1 cup shredded carrot

olive oil for cooking

green onion and sesame seed for garnish (optional)

Honey Garlic Sauce:

1/3 cup low-sodium soy sauce

2 tbs rice vinegar

2 tbs honey

1 tbs sesame oil

2 tsp minced garlic

2 tsp minced ginger

1/2 tsp red chili flakes

cornstarch slurry (1 tsp cornstarch mixed with 1 tsp water)

Instructies

press tofu dry, cut to half-inch cubes, lightly toss with oil, and air fry at 400F for 15-20 min until crispy

cook protein pasta according to package instructions, strain, and set aside (drizzle with a bit of olive oil to prevent sticking)

combine sauce ingredients in a small sauce pan, place on medium heat, and bring to a low simmer until the sauce thickens; then cool sauce to room temp

in a large bowl combine the pasta, fresh vegetables, and honey garlic sauce

divide equally into meal prep containers (optional), garnish, and allow to cool in the fridge for at least 30 minutes before enjoying
