Spicy Spaghetti

16oz spaghetti

1 pkg Pancetta

1 Chopped White Onion (Small)

4oz White Wine

2 Cups Chopped Tomatoes

1 Cup Tomato Puree

1/3 Cup Pecorino Romano Cheese

Fresh Basil

Instructies

Render the fat of the panchetta (about 1o minutes). Once the fat is rendered, remove the panchetta from the pan.

Add the onion to the panchetta fat and sautee just until they begin to color.

While the onion is sauteeing add scotch bonnet powder or red pepper flakes. Remove from the heat while you stir in the spice so you do not burn it.

Degalze the pan with the white wine. Let it almost completly cook off.

Once the wine is cooked off. Add the chopped tomatoes and tomato puree. Cook on medium low for about 10 minutes while you cook the pasta. Add fresh basil to sauce while it cooks.

Add the al dente spaghetti and mix in the sauce. Once you mixed the pasta in turn off the heat and quickly add the Pecorino Romano. Mix it until it dissolves.

Serve Fresh and Hot with extra cheese on top!
