Mango Salmon Salsa

Ingrediënten

  • 5-7 lbs Salmon (~1lbs per serving)

  • 2-3 Cups White Rice

  • 2-3 Ripe Mangos (1 mango/2-3 servings)

  • Cilantro (1 bunch chopped)

  • 1 Whole Red Onion (diced)

  • 3-5 Limes (squeezed)

  • optional: 1 Sliced Lemon 🍋

  • optional: Sliced butter 🧈

Seasonings 🧂(until the ancestors say so)

  • Chef Minito Fish seasoning

  • Garlic powder

  • Onion powder

  • salt to taste

  • pepper to taste

Instructies

  1. Wash + cook 2-3 cups of white rice

  2. Preheat oven to 350*F

  3. Slice the Salmon into fillets

  4. season and line the pan with/ foil

  5. optional: top salmon fillets w/ sliced butter + lemon slices

  6. Cook Salmon in oven for 15-17min uncovered

Mango Salsa:

  1. Cut mangos into 1/3’s around the seed, Big Spoon the mango out of the skin + Dice mangos on cutting board > into medium sized bowl (*I like to spoon over bowl for mango juice to fall in bowl)

  2. Dice 1 red whole onion > into bowl (cutting onion *goggle eyes or cold freezer air helps crying)

  3. Chop 1 washed Cilantro bunch > into bowl

  4. Chop + Squeeze limes 🍋‍🟩> into bowl

  5. Salt 🧂+ Black Pepper to taste

  6. mix Salsa and taste, adjust to preference (*Too Sour: Add salt slowly + taste accordingly)
