Chilli-sesame Vegan Dumplings

Dumpling wrappers (round, 30–35 pieces)
1 block firm tofu, pressed & crumbled
1 cup shredded cabbage
1 small carrot, grated
2 spring onions, finely chopped
2 garlic cloves, minced
1 tbsp ginger, grated
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp rice vinegar
Pinch of salt & black pepper
Chilli-Sesame Drizzle
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp maple syrup
1 tbsp sesame oil
2 tsp chilli flakes
1 tsp toasted sesame seeds
Instructies
In a bowl, combine tofu, cabbage, carrot, onions, garlic, ginger, soy sauce, sesame oil, vinegar, salt & pepper until well mixed.
Place a wrapper in your palm, add 1 tsp filling in the centre, wet the edge with water & fold into a half-moon. Pleat edges to seal. Repeat.
Heat a large non-stick pan with a little vegetable oil. Arrange dumplings flat-side down & cook 2–3 mins until golden.
Pour in ¼ cup water, cover immediately & steam 5–6 mins until wrappers are tender and water evaporates. Uncover to crisp bottoms further if needed.
For drizzle: whisk soy, vinegar, maple, sesame oil, chilli & seeds.
Serve dumplings hot with the drizzle spooned over & garnish with extra spring onions.
