Beautiful Moroccan Couscous

Ingrediënten

150g Couscous

190ml Boiling Water

1 tsp Veg Stock Powder (Marigold)

½ tsp Paprika

½ tsp Cumin

1 glug olive oil

1 tsp Tomato Puree

1 tsp Harissa

1 small squirt Honey

1 tsp Sumac

½ Lemon (juice only)

1 Handfull chopped herbs

1 Bowl chopped veggies, to include tomatoes, red onion and after that, anything you like

Instructies

1 Mix stock powder with water

2 Combine couscous, paprika and cumin and some salt and pepper. Add Stock. Cover with clingfilm and allow to rest for at least 10 minutes. Flake then cover and leave to cool.

3 Flake couscous and add oil. Mix well.

4 Add tomato puree And harissa. Combine with your hands until well combined

5 Add sumac, lemon juice and herbs and chopped vegetables. Mix well and enjoy
