ROASTED TOMATO SOUP W/GARLIC BREAD

2 heirloom tomatoes, roughly chopped
• 4-5 tomatoes on the vine, roughly chopped
1 pack of cherry tomatoes
2 carrots, roughly chopped
1 red onion, roughly chopped
2 bulbs of garlic, top cut off
couple sprigs of rosemary
olive oil
sea salt and pepper to taste
chicken or vegetable stock to thin out soup
Basil and parsley, finely chopped
1 teaspoon dried oregano
2-3 tablespoons white miso paste, dissolved in some warm water
Garlic Butter
• 16 oz of heavy whipping cream
• sea salt and pepper to taste
• parsley
roasted garlic cloves (using the ones that get roasted with the tomatoes)
Instructies
Preheat your oven to 425F
Line your baking tray with parchment paper and place tomatoes, carrot and onion on it. Place garlic bulb in between and top with a good drizzle of olive oil.
Place rosemary in between tomatoes and generously sprinkle everything with a good amount of salt, pepper and olive oil.
Roast for about 40-45 minutes. Set roasted garlic aside
Once done roasting let cool for 10-15 minutes. Then, add everything but the Garlic and Rosemary to a blender. Pour in all the juices left on baking tray, add chicken stock and blend to reach desired thickness and consistency
After blending transfer to a large pot. Heat on medium-low heat and add your miso, oregano and finely chopped basil.
Season to taste with salt and pepper if needed. Let simmer for at least 10 minutes.
In the meantime, add heavy cream to stand mixer and using the whip attachment whip on medium high speed until you've passed the whipped cream stage and your solid butter separates from the buttermilk
Pour everything into strainer and press down to get rid of any excess buttermilk (you can use the buttermilk like you would skim milk)
Rinse butter under cold water, then add your roasted garlic, finely chopped parsley and salt.
Form and store in container or wax paper.
If not using immediately put in refrigerator.
Add garlic herb butter to fresh bread and top with cheese to make cheesy garlic bread to have with the tomato soup.
