Grilled Tofu with Greens

Ingrediënten

200–250g firm or extra-firm tofu, pressed and sliced

1 tbsp olive oil or avocado oil

1 tbsp tamari or low-sodium soy sauce

1 tsp lemon juice or rice vinegar

½ tsp garlic powder or 1 clove minced garlic

½ tsp smoked paprika (optional for flavor)

Salt & pepper to taste

Greens (choose 2–3):

2 cups baby spinach or kale

½ cup broccoli florets, steamed or sautéed

½ small zucchini, sliced

¼ cup edamame (optional protein boost)

1 tbsp pumpkin seeds or hemp seeds for topping

Optional dressing:

1 tbsp tahini + 1 tsp lemon juice + warm water to thin

Instructies

Prepare tofu: Pat tofu dry and slice into 1–2 cm slabs. Mix olive oil, tamari, lemon juice, garlic, and paprika in a bowl. Coat tofu slices and let marinate for 10–15 minutes (or overnight for extra flavor).

Grill tofu: Heat a grill pan or nonstick pan over medium heat. Cook tofu for 3–4 minutes per side until golden and crisp.

Sauté greens: In the same pan, lightly sauté greens and broccoli for 2–3 minutes with a drizzle of olive oil and a pinch of salt.

Assemble: Serve grilled tofu over greens. Drizzle with tahini dressing and sprinkle with seeds for crunch.
