Miso-Glazed Tofu Stir-Fry

Ingrediënten

400 g extra-firm tofu, pressed and cubed

1 tsp sesame oil (or olive oil)

Veggies

150 g broccoli florets

100 g capsicum (bell pepper), sliced

100 g snow peas or green beans

100 g mushrooms, sliced

2 spring onions, sliced

Miso Glaze

1½ tbsp white or yellow miso paste

1 tbsp soy sauce or tamari

1 tbsp rice vinegar or lime juice

1 tsp maple syrup or honey (optional, small amount)

1 tsp grated ginger

1 clove garlic, minced

2–3 tbsp water

Optional Protein Boost

½ cup (90 g) cooked edamame

OR 2 tbsp hemp seeds

Instructies

Heat sesame oil in a large pan or wok over medium-high heat.

Add tofu and cook 6–8 minutes, turning until golden on all sides. Remove and set aside.

In the same pan, add vegetables (except spring onions). Stir-fry 4–5 minutes until tender-crisp.

Whisk all miso glaze ingredients until smooth.

Return tofu (and edamame if using) to the pan. Pour glaze over.

Toss and cook 2–3 minutes until everything is coated and glossy.

Remove from heat and sprinkle with spring onions.
