Greek-style Halloumi Flatbread

Crispy, golden halloumi layered over warm, fluffy flatbread, topped with juicy tomatoes, crisp cucumber, red onion and a delicious tzatziki.
Fresh, flavourful and straight from the Mediterranean dream!
Ingredients (for 1 flatbread):
1 flatbread
a few slices of halloumi cheese
half cucumber, halved and sliced
half large tomato, chopped
half red onion, thinly sliced
extra virgin olive oil
lemon juice
salt and pepper
dried oregano
Tzatziki sauce
2 tablespoons Greek yogurt
1 garlic clove, minced
salt and pepper, to taste
a drizzle of lemon juice
1 tablespoon extra virgin olive oil
1 tablespoon grated cucumber
1 teaspoon dill, finely chopped
For garnish
fresh parsley
chilli flakes
Instructies
Start by slicing your halloumi cheese. Pour hot water over the slices and soak for 15-20 minutes (this technique will soften the cheese and reduce its saltiness before cooking).
Meanwhile, add cucumbers, tomatoes and red onions to a bowl. Season with salt and pepper, squeeze some lemon juice and add a drizzle of olive oil. Give it a gentle mix.
Mix the ingredients for the tzatziki together and chill until ready to serve.
Toss the halloumi slices with dried oregano, some pepper, a drizzle of lemon juice and olive oil. Cook on medium high heat for 1-2 minutes on each side until golden.
Spread the flatbread with tzatziki sauce, top with the cucumber, tomatoes and onion mix, and the halloumi slices. Garnish with fresh parsley and chilli flakes. Wrap up and serve. Enjoy!
