Cucumber + Pepper Bean Salad:

3-4 Persian cucumbers, cut into half moons

2 handfuls mini bell peppers, sliced

1 can garbanzo beans

1 can cannellini beans

¼-½ red onion, diced

⅓ cup Kalamata olives

½ cup banana peppers

½ cup sliced pepperoncinis

Sauce:

2 tbsp balsamic vinegar

2 tbsp white wine vinegar

1 ½ tbsp Dijon mustard

Splash of juice from banana pepper jar

Splash of juice from pepperoncini jar

Juice of ½ a lemon

Generous sprinkle of dried herbs - I use thyme or oregano

Generous dash of salt to taste

Fresh pepper to taste
