Pineapple Chicken and Rice Bowls

Ingrediënten

2 lbs boneless skinless chicken thighs, cut to large chunks

2 medium bell peppers, cut to one-inch by quarter-inch strips

1 medium sweet onion, cut to large chunks

2 1/2 cups water

1 1/2 cups uncooked rice, washed

2 cups freshly cut pineapple chunks

3 tbs low-sodium soy sauce

1 tbs freshly minced garlic

1 tbs freshly minced ginger

1 tbs honey

2 tsp tomato paste

2 tsp sesame oil

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp red chili flakes

1/4 tsp salt

1/4 tsp pepper

cornstarch slurry (1 tsp cornstarch mixed with 2 tsp water)

olive oil for cooking

Instructies

add rice and water into a rice cooker or pot with a lid; cook on low until fluffy

in a large bowl combine chicken, 1 tbs olive oil, onion and garlic powder, smoked paprika, salt, and pepper

heat a large pan to medium-high heat and sear the chicken for 2-3 min until it turns white up the sides; flip over and cook for another 2 min

add in peppers and onions and sauté for 1 min

add in fresh garlic and ginger, chili flakes, fresh pineapple, and cook for 1 min

create a well in the center and add tomato paste; mix well and cook it down for 1 min

add soy sauce, sesame oil, and honey around the edge and mix well; cook for 1 min

pour in cornstarch slurry and mix well

lower the heat and gently mix until sauce thickens and coats the dish

turn off the heat and build the bowls
