Creamy White Bean & Lentil Soup

2 (15 oz) cans great northern beans

2 (15 oz) cans cannellini beans

4 cups vegetable stock

4 cups fresh spinach

1 1/2 cups dry green lentils

1 cup diced yellow onion

1 cup diced carrots

1 cup diced celery

3 tbsp nutritional yeast or parmesan

2 tbsp sun-dried tomatoes

1 tbsp minced garlic

1 tbsp tomato paste

1 tsp dried basil

2 tsp dried oregano

2 tsp dried thyme

1 tsp onion powder

1 tsp garlic powder

1 tsp paprika

1/2 tsp red chili flakes

juice + zest of 1 lemon

salt and pepper

Garnish:

parsley, chili oil, extra lemon juice

Instructies

1.) Add + cook: Add everything except spinach, nutritional yeast/parmesan, and garnish to a pressure cooker or crockpot

2.) Cook: Pressure cook for 45 min or slow cook on low for 6 hours until lentils and veggies are tender

3.) Blend: Remove ~1/3of the soup, blend until smooth, then add back

4.) Finish: Stir in spinach and nutritional yeast/parmesan until spinach is wilted

5.) Serve: Garnish with parsley, chili oil, and lemon juice
