Miso Caramelised Onion Ramen

1 tbsp olive oil
1 tbsp unsalted butter
1 large onion, thinly sliced
3 cloves garlic, thinly sliced
1 tsp ginger, finely minced
2 tbsp white or yellow miso paste
1 tsp soy sauce
1 tsp honey or mirin
2 packs Shin Ramyun noodles
200 g shrimp, peeled and deveined
½ cup heavy cream
½ cup parmesan cheese, grated (plus extra for garnish)
Chives, finely chopped, for garnish
Chili oil (optional)
Instructies
Heat olive oil + butter in a pan over medium heat.
Add onions with a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown and sweet (10–12 min).
Set caramelised onions aside.
In the same pan, add garlic, ginger, miso paste, soy sauce, and honey or mirin. Cook 1–2 min until fragrant.
Add shrimp and sauté until just cooked (2–3 min).
Reduce heat to low. Pour in heavy cream and grated parmesan cheese. Stir until smooth and creamy.
Fold in the caramelised onions, then the cooked Shin Ramyun noodles. Toss gently until everything is evenly coated with the creamy miso sauce.
Garnish generously with chopped chives and extra parmesan cheese.
Drizzle with chili oil if desired.
