Creamy Dijon Chicken and Potatoes

4 boneless, skinless chicken breasts

1 lb baby potatoes, halved

1 cup chicken broth

½ cup heavy cream

3 tbsp Dijon mustard

2 cloves garlic, minced

1 tsp dried thyme

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructies

Preheat Oven: Preheat your oven to 400°F (200°C).

Brown Chicken: Season chicken breasts with salt and pepper. In an oven-safe skillet, heat olive oil over medium-high heat. Brown the chicken on both sides, then remove from the skillet and set aside.

Cook Potatoes: In the same skillet, add halved baby potatoes and cook until they start to brown.

Make Sauce: Add minced garlic to the skillet and cook until fragrant. Stir in chicken broth, heavy cream, Dijon mustard, and dried thyme. Season with salt and pepper.

Combine Ingredients: Return the chicken to the skillet, nestling it among the potatoes. Spoon some sauce over the chicken.

Bake: Transfer the skillet to the preheated oven and bake for about 25-30 minutes or until the chicken is cooked through and the potatoes are tender.

Serve: Garnish with fresh parsley and serve warm. Enjoy the creamy Dijon chicken and potatoes straight from the skillet!
