Slow-simmered Spiced Beef Curry with Fluffy Basmati Rice & G

Ingrediënten

1 ½ lbs beef chuck, cut into 1-inch cubes

2 tbsp vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

2 tsp ground cumin

2 tsp ground coriander

1 tsp turmeric

1 tsp garam masala

1 tsp paprika

Instructies

Heat oil in a heavy-bottomed pot or Dutch oven over medium heat. Add onions and sauté until golden brown, about 10 minutes.

Stir in garlic and ginger, cooking for 1 minute until fragrant.

Add cumin, coriander, turmeric, garam masala, paprika, and cayenne. Stir spices into the onion mixture and cook for 1 minute.

Add the beef cubes, season with salt, and brown them on all sides, about 5–6 minutes.

Pour in crushed tomatoes and beef broth. Stir well to combine.

Lower heat, cover, and simmer for 1.5 to 2 hours, until the beef is fork-tender and the sauce is thickened.

Stir in yogurt and lemon juice. Simmer uncovered for another 10 minutes.

Serve hot with basmati rice, warm garlic naan, and garnish with fresh cilantro.
