Miso Soup

Ingrediënten

4 cups water

1 large piece of kombu

2 Tbsp dried wakame seaweed

3 Tbsp white/shiro miso paste (Optional: add more to taste)

12 oz cubed silken or soft tofu

3 scallions, green parts sliced

Optional: spinach, mushrooms

Instructies

Soak the kombu in the 4 cups of water for at least 15 minutes (A longer soak for more umami flavor).

Soak the wakame seaweed in enough water to cover. It will expand a lot in just a few minutes. Once it has increased in size, drain the water and set aside.

Remove the kombu from the water. Heat up the water and bring to a simmer.

Add wakame seaweed. Add and whisk miso paste. Then add tofu and scallions. (Optional: Take a mugful of water from the pot to mix and resolve the miso paste seperately and return to the pot)

Cook for another 5 minutes. Serve!
