Ingrediënten

1 ½ lb eggplant, cubed

2 celery stalks, diced

1 yellow onion, chopped

1/3 cup green olives, pitted + chopped

2 tbsp capers, rinsed

2 tbsp tomato paste

1 lb cherry tomatoes, halved

1 shot white wine vinegar

1 tbsp sugar

Olive oil (for frying + sautéing)

Salt to taste

Fresh basil to finish

Instructies

Fry eggplant in olive oil until golden. Set aside.

Sauté celery + onion until soft.

Add tomato paste, cook 1 min.

Add olives, capers, tomatoes, vinegar, sugar, and salt. Simmer 5-7 min.

Fold in eggplant + basil. Simmer a few more min.

Let it rest and cool off.

Serve at room temp with crusty bread.
