Pecan Crusted Chicken

Ingrediënten

1/4 cup pecans

1/2 cup Panko breadcrumbs

* 2 TBSP fry seasoning (1 part garlic powder, 1 part onion powder 2 parts paprika)

* 2 chicken breasts butterflied

* Honey mustard

Instructies

Heat oven to 450°.

Finely chop pecans.

Melt a tablespoon of butter in bowl, add chopped pecans, Panko, 1/2 the fry seasoning, a drizzle of olive oil, and a pinch of salt and pepper

Pat chicken dry, season with salt and remaining fry seasoning, place on lightly oiled baking sheet.

Evenly spread chicken with a thin layer of honey mustard. Mound with the pecan mixture, pressing firmly to adhere.

Roast until crust is golden brown and chicken is cooked through.

(Goes well with salad w/apple slices and a lemon dressing)
