Ingrediënten

Crepe

  • 1 cup all purpose flour

  • 2 eggs

  • 2 tbsp cooking oil

  • 1/2 tsp salt

  • 1 1/2 cup milk

Veggies

  • 1/2 lb green beans sliced 1/8 inch thick

  • 1 carrot sliced into small strips

  • 1/2 jicama sliced small strip

  • 1/4 lbs snow peas sliced same

  • 1/2 onion thin sliced

  • 3 garlic cloves minced

  • firm tofu fried in strips

  • oyster sauce

  • salt and pepper to taste

  • Red lettuce leaves for wrapping

Peanut Sauce

  • 1/2 cup chopped honey roasted peanuts

  • 1 cup water

  • 2 tbsp cornstarch dissolved in water

  • 1/8 - 1/4 cup brown sugar

  • 1/8 cup soy sauce

  • pepper

  • minced garlic to taste

Instructies

Crepes

  • Mix all ingredients until smooth. (The batter can be made ahead of time and cooked when the rest is ready). Cook in a nonstick pan until light brown. Put parchment in between cooked crepes to keep from sticking.

Veggies

  • Saute all ingredients together and drain. First fry the tofu strips, then remove once golden brown and crispy. Then add in the onions and garlic until fragrant, then the rest of the veggies. Toss back in the tofu. Stir fry until almost done then add the oyster and seasonings.

Sauce

  • Cook all ingredients together until thick.

Assembly

  • Crepe, red lettuce leaf on top, stir fried veggies, then wrap up however you like. Rolling them is normal and placing the lettuce leaf so the fringes are outside the crepe when rolled for visual effect.
