This soft, stretchy South-Indian style flatbread pulls apart into the most irresistible, flaky, buttery layers.

I’ve been ✨OBSESSED ✨ with perfecting this restaurant favorite since my first trip to India.

The layers are created by brushing the dough with melted butter, coiling it up, then rolling it out. This creates pockets of butter throughout.

Once cooked, the layers puff and make an incredible textural contrast to the soft, stretchy flatbread.

You may also know it as Kerala Parotta, Lachha Paratha, Roti Canai (in Malaysia), Malabar Parotha or Buss Up Shut (in the Caribbean). It goes by so many names around the world.

Here’s what you need:

4 cups all-purpose flour

1 cup warm water

½ cup yogurt

6 tbsp vegetable oil

2 ½ tsp kosher salt

4 tbsp melted butter
