Peri Peri Chicken Skewers

Ingrediënten

Chicken boneless < thigh / breast > 450gms

Peri peri marinade 1 cup < ingredients below >

olive oil 4-5 tablespoons

Peri peri marinade

Red bell peppers 1 large or 2 medium cut into cubes

Red chillies 3-4

Red Onion 1 large cut into cubes

Garlic cloves 7-8

Tomato 2-3 medium or cherry 🍒 tomatoes 6-8

Salt according to taste

Paprika powder 1 tablespoon

Ceyenne pepper powder 1 tablespoon

White pepper powder 1 teaspoon

Black pepper powder 1 teaspoon

Oregano & thyme 1 tablespoon

Lemon zest 1-2 tablespoons

Lemon juice 4-5 tablespoons of freshly squeezed lemon

Olive oil 4 -5 tablespoons

Instructies

First in a frying pan add bell pepper , onion , tomatoes and garlic cloves with olive oil and toss for 7-8 min until lightly sautéed

Now in a blender add the toasted bell pepper , onion , garlic with tomato , spices and lemon with olive oil and blend on high speed until thick paste is formed

Marinate the chicken pieces in the marinade for 4-6 hours

Arrange in skewers and then grill in oven @180 Celsius for 15-17 min until it’s done from both sides

Squeeze more lemon juice and chillies and drizzle peri peri sauce

U can also airfry or pan fry or simple grill as u like
