Salmon Baked Potatoe - Nara Smith

Ingrediënten

Kimchi Tartar sauce:

4 tablespoons chopped kimchi

½ cup mayo

¼ cup chives you can substitute with 2 tablespoons dried chives

¼ cup dill

1/2 tablespoon dijon mustard

½ lemon, juiced

salt and pepper to taste

Honey mustard salmon:

Salmon fillet

¼ cup honey

¼ cup dijon mustard

a squeeze of lemon juice

I eyeball all my spices for this: smoked paprika, lemon pepper and garlic powder

Salt and Pepper to taste

Baked potato:

4 medium russet potatoes

Olive oil, to rub over potatoes

pinch of salt and pepper

Instructies

Preheat oven to 450F

Wash your potatoes and coat in oil, salt and pepper

Use a fork to poke in holes all over and lay on parchment paper lined baking tray

Bake for 50 minutes to 1 hour. Use oven mittens to squeeze potato to check for doneness. If it feels soft pull out and let rest for 5 minutes before slicing open.

While potatoes are baking, place salmon in a bowl and marinade with honey, mustard, lemon juice, spices and salt.

Give it a good mix and let it sit.

Chop up Kimchi, Dill and Chives.

Combine in a small bowl with mayo, lemon juice, mustard and salt and pepper.

10-15 minutes before your potatoes are done pull out the baking tray and add salmon.

Bake for 10-15 minutes until done.

Slice open potato and add a dollop of garlic butter or olive oil (optional).

Place your salmon on top of potato and drizzle with Tartar sauce.

Garnish with pickled onions and sprigs of dill.
