Meatballs with Fava Beans

For the fava bean sauce:
3 tbsp olive oil
2 medium onions, finely chopped
15lb 700g ava beans, fresh, or frozen, rinsed
ground black pepper
2 cups vegetable stock / water + ¾ tsp salt
2 sprigs thyme
juice from 1 lemon
1 cup almond milk (store bought or see recipe, page 222)
for the meatballs;
2 tosp olive oil zonions, inely chopped * cup ground walnuts, or breadcrumbs
7 tbsp each chopped parsley, mint, celery.

Instructies
To make the fava bean sauce: If using fresh fava beans, remove the connecting hard string using a sharp knife.
Cut into ½ inch / 1½ cm slices.
Heat the olive oil in a large saucepan over medium-high heat and add the onions. Cook until golden, stirring occasionally. Add the fava beans and stir to coat the beans with oil. Add the black pepper and the thyme and then the stock and lemon juice. If using salted stock, there is no need to add salt, if using water, add ¾ tsp salt.
Bring to a boil, then simmer on medium heat for 20 minutes. Take out a cup of the fava beans and blitz them with the almond milk.
Transfer the meatballs with their juices into the pan with the fava bean sauce and then add the fava beans-almond milk
Cook over low heat for 30 minutes.
Taste and adjust salt and lemon juice.
