Diced stewing beef: 500g
Onion: 2 large, finely chopped
Garlic: 3 cloves, minced
Ginger: 1 tbsp, grated
Vegetable oil: 2 tbsp
Ground cumin: 1 tsp
Ground coriander: 1 tsp
Turmeric: 1 tsp
Chilli powder: ½–1 tsp (to taste)
Ground cinnamon: ½ tsp
Garam masala: 1 tsp
Chopped tomatoes (tinned): 400g
Red lentils: 100g, rinsed
Lemon juice: 1 tbsp
Soft brown sugar: 1 tbsp
Fresh coriander: to garnish
Water or beef stock: 500ml
Salt: to taste
Instructies
Heat oil in a large saucepan and cook onions until soft and golden.
Add garlic and ginger, cooking for a minute until fragrant.
Stir in all the spices and cook for 1 minute to release their oils.
Add the beef and brown all over.
Pour in the tomatoes, lentils, and water or stock. Stir well.
Bring to the boil, then reduce to a simmer. Cover and cook gently for 1½ to 2 hours until the beef is tender and the lentils have broken down.
Stir in lemon juice and brown sugar. Season to taste.
Garnish with fresh coriander and serve.
