Stuffed Sweet Potatoes

1 lb ground beef

1 1/2 tsp salt

2 tsp garlic powder

2 tsp smoked paprika

1 tsp cumin

1 tsp chili powder

1 tsp pepper

2 medium sweet potatoes, cut in half

Olive oil

1/2 cup cottage cheese

1 tbsp pickled red onions

1 tsp honey

1/2 avocado, sliced

Tajin, to taste

Instructies

Preheat your oven to 450°F. Slice the sweet potatoes in half lengthwise, drizzle with olive oil, and place cut-side down on a baking sheet. Roast for 25 minutes or until fork-tender and golden. Remove from oven and let cool slightly.

In a large skillet over medium heat, add your ground beef. Season with salt, garlic powder, smoked paprika, cumin, chili powder, and pepper. Cook, breaking it up with a spatula, until fully browned and cooked through. Remove from heat.

Place roasted sweet potato halves on a plate or serving dish. Spoon over the seasoned ground beef. Add a scoop of cottage cheese to each, a few slices of avocado, a bit of pickled red onion, a small drizzle of honey, and sprinkle with Tajin.

Enjoy warm, or store components separately in the fridge and assemble when ready to eat.
