Nikki and Siah Safe 1-Pot Stroganoff

1 lb lean ground beef/turkey
8 oz button mushrooms, sliced (can buy canned)
1/2 teaspoon dried thyme
3 tablespoons butter
1/4 cup all-purpose GF flour
4 cups beef broth i.e. can be made from FODY vegetable soup base
1 tablespoon coconut aminos OR GF soy sauce like Tamari
12 oz GF pasta
1/2 cup Hellman's Plant-based mayo/DF sour cream i.e. Foragers
salt and freshly ground black pepper, to taste

Preparation
In a big pasta pot, season and brown the ground meat over medium-high heat, breaking it apart as it cooks. When almost cooked through, add mushrooms and thyme and cook until browned, 5-7 minutes. Remove to a bowl and set aside.
In pot, add butter. Once melted, stir in flour and cook 1-2 minutes, stirring constantly.
In pot, add soup base w/ water and add aminos, stirring, followed by the noodles. Bring to a boil, following directions for the gluten-free noodles cooking until al dente, stir occasionally.
Add ground meat and mushrooms to pot, along with the mayo/sour cream, stir to combine. Season to taste with salt and pepper and serve. Enjoy!
Notities
Made adjustments to ingredients omitting high FODMAPs and making gluten-free and dairy-free
Vegan mayo still experimental, recipe may work better with sour cream
