24 oz baby bella mushrooms, thinly sliced
2 shallots, thinly sliced
2 tbsp neutral oil
½ cup sour cream
½ cup heavy cream
1 tsp garlic powder
Salt and black pepper, to taste
1 to 1.5 cups cooked shredded chicken
¼ cup chopped sun-dried tomatoes
2 cups fresh spinach, roughly chopped
½ to 0.75 cup shredded mozzarella cheese

Step 1
Preheat your oven to 375°F (190°C). While it heats, prep your ingredients—slice the mushrooms and shallots, shred the chicken, and chop the spinach.
Step 2
In a large oven-safe skillet or sauté pan, heat the oil over medium-high. Add the mushrooms and shallots, cooking for 6–8 minutes until soft, golden, and fragrant.
Step 3
Add garlic powder, salt, and pepper. Stir in the shredded chicken and sun-dried tomatoes. Let it all mingle for a minute or two.
Step 4
Toss in the spinach and stir until just wilted. Lower the heat and mix in the sour cream and heavy cream until you have a thick, creamy mixture.

If not using an oven-safe pan, transfer everything to a greased baking dish. Sprinkle the mozzarella over the top evenly.
Step 6
Bake for 18–22 minutes until the cheese is melted and edges are slightly crisped.
Step 7
Let the dish sit for 5 minutes to thicken slightly before serving.
