Crispy Rice Salad

Crispy rice:
About 1 cup or 150g cooked rice
1 tbsp soy sauce
1/2 tbsp sesame oil
1 tbsp crisp chilli
Salad:
1 cup sliced cucumber
1 cup cooked edamame
1 avocado, diced
2 spring onions, thinly sliced
150g shredded chicken breast
Bunch of coriander, chopped
Mint chopped
Dressing:
3 tbsp tahini
1/2 tbsp maple syrup
1-2tbsp soy sauce
Juice of 1-2 limes
1 garlic clove, minced
Chili oil
Salt and pepper
Instructies
Preheat oven to 180c
Place the cooked rice in a lined baking tray, add soy sauce, sesame oil and crisp chilli, mix well to combine, spread evenly in the tray and slide into the oven for 12-20 minutes or until crispy.
Prepare the dressing, mix all ingredients in a small bowl.
Place all the salad ingredients in a large bowl, mix well to combine, add crispy rice, dressing, serve and enjoy.
