Cottage Cheese & Roast Veg Plate

Roast Veg
150 g broccoli florets
100 g carrot, sliced
100 g zucchini, sliced
100 g capsicum (bell pepper)
1½ tsp olive oil
Salt, pepper
½ tsp smoked paprika or cumin (optional)
Protein
200 g low-fat or high-protein cottage cheese
Optional Extras
10 g pumpkin seeds or sunflower seeds
30 g avocado (≈ ¼ small avocado)
Fresh herbs (parsley, basil, thyme)
Simple Dressing (optional)
1 tsp olive oil
1 tsp lemon juice or balsamic vinegar
Instructies
Preheat oven to 200°C.
Toss vegetables with olive oil, salt, pepper, and spices.
Roast on a lined tray 25–30 minutes, turning halfway.
Plate roast veg and add cottage cheese on the side or on top.
Drizzle with dressing and finish with seeds and herbs.
