10 Minute Spicy Tuna Sushi

Ingrediënten

2 cans of Safe Catch tuna (for the most protein per can you can get)

150g uncooked medium grain white rice

2 tbsp non-fat greek yogurt

2 tbsp light mayo

2 tsp sriracha

1/2 medium ripe avocado

seaweed snacks (for seaweed layer)

1 tsp furikake

Optional: Shredded Carrots

Optional: Additional spicy mayo for garnish (adjust calories)

Instructies

Lightly grease a small ramekin with avocado oil and prepare to build your sushi top to bottom

Add your sliced avocado and spread it across the bowl

Optional: add shredded carrots (you can also pickle them with rice wine vinegar, water, salt, monk fruit and soy sauce)

Mix 2 cans of tuna with 2 tbsp of greek yogurt, 2 tbsp light mayo, and about 1 tsp of sriracha (adjust for spice tolerance), essentially making a “Tuna Salad”, and spread evenly across the ramekin

Lay out seaweed snacks to cover the dish

Pack in cooked rice tightly (optionally use an extra ramekin to pack it down)

Gently flip it onto a plate and slowly remove the ramekin, being careful to ensure nothing sticks and breaks

optionally top with Furikake (or regular and black sesame seeds) and more spicy mayo

Slice it into 8-16 pieces and enjoy!
