Crispy Smashed Sweet Potato
3 baby sweet potatoes, about 2 inches long each
3 eggs, sunny side up
1/2 avocado, sliced
Salt
Instructies
Bake sweet potatoes until soft. Smash and bake again until crispy. Top each one with 1 egg, avocado and a sprinkle of flakey salt.
