Pesto-stuffed mushroom caps

Ingrediënten

Olive oil, for greasing

2 x 250g packs of mushrooms

100g fresh basil pesto, homemade or shop-bought

120g breadcrumbs

Instructies

1 Preheat the oven to 180°C/160°C fan/ gas mark 4. Lightly grease a baking tray with olive oil.

2 Gently wipe the mushrooms with a damp cloth to remove any dirt, then carefully remove the stems.

3 In a bowl, stir together the pesto and breadcrumbs.

4 Fill each mushroom cavity with pesto breadcrumbs, mounding them slightly over the top.

5 Place on the prepared baking tray and bake for 12-15 minutes until the mushrooms are cooked and the pesto breadcrumb filling is warm.
