Apple Crisp

2-3 stalks rhubarb, sliced (optional)
4-6 apples, cored and sliced (Cortland, McIntosh, or other baking-friendly varieties)
1 tbsp cornstarch (optional)
1/2 tsp vanilla extract (optional)
120g old-fashioned/rolled oats (about 1 1/3 cup)
40g all-purpose flour (about 1/3 cup)
15g brown sugar (about 1/8 cup)
2 tsp cinnamon
1/2 tsp allspice
1/2 tsp salt
1 stick butter, softened slightly
Fremgangsmåte
Preheat oven to 375F.
If using rhubarb, place rhubarb pieces in pan and bake 7 minutes or until softened slightly.
Add sliced apples to pan and toss with vanilla (if using) and cornstarch (if using).
Mix oats, flour, cinnamon, allspice, and salt together in a medium mixing bowl. Add softened butter, breaking up into smaller pieces and pressing butter until all dry ingredients are incorporated and mixture is crumbly, but butter remains separate (not uniform or melted).
Top fruit with the butter crumble mixture in tablespoon-sized chunks until completely covered - do not press into a flat sheet or it will lose crispness and texture. Bake for 34 min (glass pan).
Notater
Adding cornstarch will thicken the apple mixture slightly, but cooling in the fridge will make it more solid without the need for cornsearch.
Vanilla, rum, or other additives to the fruit can give a nice depth of flavor, especially if not using rhubarb.
