Fremgangsmåte
Sear the sausages for maximum flavor – Heat olive oil in a skillet. Brown the sausages on all sides until golden. This locks in juices and creates caramelized bits that enrich the sauce later.
Sauté the aromatics – In the same pan, cook onion, garlic, celery, carrots, and red pepper for 3–5 minutes. This releases their natural sweetness and aroma.
Prepare the Crockpot base – Add the sautéed vegetables into the slow cooker. Place the browned sausages on top.
Build the rich sauce – Stir in chopped tomatoes, tomato paste, chicken stock, smoked paprika, thyme, rosemary, oregano, salt, and pepper.
Add the beans – Drain and rinse cannellini and butter beans. Pour them into the sauce, gently stirring so they’re submerged.
Add zucchini last – Place slices on top to steam gently without turning mushy.
Slow cook to perfection – Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
Final sauce adjustment – If you want thicker sauce, remove the lid for 20–30 minutes before serving. Stir gently so beans stay intact.
