No More Sad Cabbage! Recipe

This is one of my favorite meals and a dish I often bring to potlucks because the miso maple dressing is really THAT good!

I like to add in a little roasted kale, and add in quinoa to make it a heartier salad. Although it’s also delicious with roasted chickpeas.

If you haven’t tried roasting cabbage, you must! I wasn’t a huge cabbage fan until I started roasting it, and now I could easily eat the whole tray.

I roast mine at 400 F for 20-30 minutes and it’s golden brown.

THE dressing:

2-3 Tablespoons Miso paste

Juice of 1 big lemons

1 teaspoon of maple syrup or to your taste

Salt, Pepper

I do this to taste and don’t have an exact recipe, but its really hard to mess up so give a go!
