Pantesca salad is a traditional recipe from the island of Pantelleria, which is located between Sicily and Tunisia. It’s a true celebration of Mediterranean flavours that is so easy to make but has so much flavour.
Boiled potatoes, fresh tomatoes, pickled red onions, fresh basil and oregano, savoury olives, capers and a generous drizzle of good quality extra virgin olove oil make an incredible potato salad thay can be enjoyed on its own or as a side dish for chicken, steak, fish or even legumes. You’ll want to make this over and over again!

3 tbsp red wine vinegar
20g fresh basil
2 tsp dry oregano
70g green olives
