Ingredienser

4 boneless, skinless chicken breasts

1 ½ cups fresh spinach (packed)

1 cup sliced mushrooms (white or cremini)

2 tbsp olive oil or butter

3 cloves garlic, minced

1 tsp Italian seasoning

½ tsp paprika

Salt & pepper to taste

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh parsley for garnish

Preheat Oven:

Set oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.

Sear Chicken:

Season chicken with salt, pepper, paprika, and Italian seasoning.

Heat olive oil or butter in a skillet over medium-high heat.

Sear chicken for 2–3 minutes on each side until lightly golden (it will finish cooking in the oven). Remove and set aside.

Prepare the Sauce:

In the same skillet, add mushrooms and sauté for 4–5 minutes until browned.

Add minced garlic and cook for 30 seconds.

Stir in chicken broth and heavy cream.

Add Parmesan cheese and simmer until slightly thickened (3–5 minutes).

Add Spinach:

Stir in spinach until wilted. Season with salt and pepper to taste.

Assemble:

Place seared chicken in the baking dish.

Pour the creamy mushroom-spinach sauce over the top.

Sprinkle shredded mozzarella evenly over everything.

Bake:

Bake uncovered for 20–25 minutes, or until chicken is cooked through and cheese is bubbly and golden.

Finish:

Garnish with chopped parsley before serving.

Serving Suggestions

Serve with cauliflower rice or zucchini noodles for a fully low-carb meal.

Add a side of roasted asparagus or a crisp garden salad.
