500g chicken breast, diced
1/3 cup cornflour
1 onion, chopped
1 garlic clove, crushed
1 large carrot, sliced
1 sweet red pepper
1/2 chopped fresh pineapple
For the sauce
1/3 cup ketchup
1/3 cup apple cider vinegar
1/4 cup honey
2 tbsp light soy sauce
2 tbsp oil for frying
Fremgangsmåte
prep pineapple, chicken, veggies and sauce
Place cornflour in a bowl, add the chicken pieces and mix until coated.
Heat the oil in a non-stick pan.
Fry the cornflour-covered chicken on high (don’t stir.)
Turn over after about 4 minutes or when browned. Let the other side brown for about 3 minutes on high.
Add the onion, garlic, carrot and pepper. Stir gently and cook for about 3 minutes.
Add the sauce to the pan, and let it sizzle on high for a few mins until it thickens.
add in the pineapple
Serve with rice, some chopped spring onions and a sprinkling of sesame seeds
