Loaded Bacon Smash Cheeseburger

For the burgers
500 g ground beef, 80/20

Black pepper
4 slices American cheese
4 brioche burger buns
Butter, for toasting buns
For the bacon
6 to 8 strips bacon

Shredded lettuce
1 large tomato, sliced
Pickles, sliced
Burger sauce
4 tbsp mayo
2 tbsp ketchup
1 tbsp yellow mustard
1 tsp pickle juice
1 tsp finely chopped pickles or relish
1/4 tsp garlic powder
1/4 tsp paprika

Cook the bacon
Place bacon in a cold pan.
Turn heat to medium and cook until crispy, flipping as needed.
Transfer to paper towel.
Keep a little bacon fat in the pan for extra flavor.
Make the sauce
Mix mayo, ketchup, mustard, pickle juice, chopped pickles, garlic powder, and paprika.
Taste and adjust. It should be creamy, tangy, and slightly sweet.
Prep the beef
Divide beef into 4 loose balls, about 125 g each.
Do not compact them too much.
Keep chilled until ready.
Toast the buns
Butter the cut side of the brioche buns.
Toast in a pan until golden.
Set aside.
Smash the patties
Heat a cast iron pan or flat griddle until very hot.
Place 2 beef balls onto the surface.
Smash hard with a spatula or burger press until thin.
Season with salt and pepper.
Let cook 1 to 2 minutes until deeply browned with crispy edges.
Flip.
Immediately add 1 slice of cheese to each patty.
Cook another 30 to 60 seconds.
Build each burger
Bottom bun:
Spread burger sauce
Add first cheesy smash patty
Add 2 bacon strips
Add second cheesy smash patty
Add more bacon
Add pickles
Add tomato
Add shredded lettuce
Add a little more sauce
Top bun
Finish
Press lightly so the bun compresses a bit.
Let it sit for 1 minute so everything settles.
Serve hot with fries or chips.
