Pavlova Christmas

Ingredienser

- Meringue

6 egg whites (room temperature)

300 g caster sugar

1 tbsp cornstarch

1 tsp white vinegar or lemon juice

- Cream

300 g mascarpone

300 ml cold heavy cream

Sugar & vanilla, to taste

Fremgangsmåte

Meringue

Whip egg whites to soft peaks. Add sugar gradually until thick, glossy and completely smooth. Gently fold in cornstarch and vinegar.

Shape

Spoon small meringue mounds onto a drawn circle, making little wells, and join into a wreath.

Baking

110°C / 230°F – 30 min

90–95°C / 195–205°F – 60 min

Do not open the oven.

Cooling

Cool completely in the oven, door slightly open.

Assemble

Whip mascarpone and cream until firm. Fill pavlova and top with berries.

Add raspberry & cranberry sauce only right before serving.
