Date & Honey Cake

DATE & HONEY CAKE
200g Medjool dates, pitted
130ml boiling water
3 large eggs
100ml vegetable oil
110g honey
20g soft brown sugar
200g self-raising flour
1 tsp bicarbonate of soda
½ cinnamon
½ salt
2 tbsp honey (optional)
1 tbsp boiling water (optional)
Fremgangsmåte
Pre-heat oven to 240’F (170’C / 150’C fan)
Place medjool dates into a blender jug and pour in boiling water. Loosely cover with lid and let sit for 5 mins
Then add 3 eggs, veg oil, honey, brown sugar; and blend until completely smooth with no date lumps left
Add self-raising flour, bi carb, cinnamon and salt. Pulse a few times just until combined. Use a spatula to mix if there’s still flour left over
Grease a cake tin with oil and baking paper at the bottom, and pour batter straight into the tin
Bake at 340’F (170’C / 150’C fan) for 40-45 minutes. Once finished, turn oven off and let sit in the oven for 10 mins to ensure it doesn’t sink
(OPTIONAL, BUT RECOMMENDED) Make syrup; add honey and boiling water to a jug and in the microwave for 20-30 seconds and mix. You want it dripping off the spoon, not clingy. Poke holes around the cake and pour the syrup in. Let the cake cool for 10 mins before removing from cake tin
