Soul Sweet 'Taters

Ingredienser

4 medium sweet potatoes

1 cup milk

1 cup sugar

2 large eggs

1 tsp vanilla extract

1 tsp salt

1 cup packed brown sugar

½ cup flour

6 Tbsp (¾ stick) cold butter, cut into pieces

1 cup chopped pecans

Fremgangsmåte

1. Preheat oven to 375°F. Wash sweet potatoes, then prick them a few times with a fork. Bake until fork-tender, 35 to 40 minutes. Slice in half and let cool slightly. Increase oven temperature to 400°F.

2. Scoop out sweet potato innards, put in a bowl, and give them a good mash. (Leave some texture; no need to mash completely.) Add milk, sugar, eggs, vanilla, and salt. Stir and mash mixture until everything is combined but not perfectly smooth.

3. Butter a 2-quart baking dish, then pour in ‘taters. Smooth out top.

4. Make topping: Combine brown sugar and flour in a medium bowl; mix. Throw in butter and use a pastry blender (or 2 forks) to cut it all together. Add pecans, and combine until topping is nice and crumbly. Sprinkle crumb mixture on top of sweet potatoes. Bake until golden brown, about 30 minutes.
