Baked Fish With Roasted Veg & Sweet Potato

Ingredienser

2 white fish fillets (e.g barramundi, snapper, tilapia)

1 tbsp olive oil

Herb mix (thyme, parsley, lemon zest)

1 large sweet potato, cut into cubes

Mixed vegetables (broccoli, zucchini, carrots)

Salt & pepper

Lemon wedges

Fremgangsmåte

  1. Preheat oven to 200°c

  2. Toss sweet potato cubes & veg in olive oil, salt & pepper. Spread on a baking tray. Roast about 20 minutes

  3. Meanwhile, season fish fillets with salt, pepper, herbs, and drizzle oil. After 20 mins, push veg to sides, put fish in centre, roast another 10-12 mins until fish is cooked and veg are tender

  4. Serve with lemon wedges

Notater

Meal prep tip:

You can roast a big tray of veg, and cook fish fresh (or reheat gently). Veg can be used across multiple meals (e.g salads, wraps)
