Baguettes are one of the hardest breads to master.
My curiosity was piqued by the many No-knead baguette recipes on the Gram and I decided to give it a try!
They don’t look like much, but turned out pretty delicious, with a nice thin crust and fluffy crumb 😋
The baguettes are a little skinny if I had to nitpick, it would have been better if I had divided the dough into 3 instead of 4 baguettes. I have made the adjustments in the recipe below :)
A completely stress-free recipe minus all the labourious kneading and 100% beginner friendly.
Would you make these?
420g Bread Flour
300g water
8 salt
2g Instant Yeast
Fremgangsmåte
Mix water, yeast, salt and flour
Rest for 30min
Perform 1 set of stretch-and-fold
Rest 30min.
2 sets of Coil Folds with 30min rest between each fold.
Place the dough in the fridge for overnight cold proof.
The next day, tip the dough out onto a well-floured surface
Divide into 4 portions and preshape
Rest the dough for 15 min
Shape the dough into baguettes as shown in the video
Proof the dough until 1.5X
Preheat oven at 230C for 30 min
Bake at 230C for 10 min with steam
Remove steam and turn down the oven to 210C
Continue baking for another 7-8 min
Best enjoyed when warm and crusty!
