Chicken Taquitos

  • 2 chicken breasts

  • Garlic powder

  • Onion powder

  • Paprika

  • Cumin

  • Chili powder

  • Salt

  • Pepper

  • Water

  • Tortillas

  • Cheddar cheese

  • Spray oil

  • Toppings: sour cream, guacamole, pico de gallo

Fremgangsmåte

1. Cook two chicken breasts on the rack in the InstaPot for 7 minutes using 1/2 cup of water.

2. Shred the chicken and add to a non-stick pan. Season generously with garlic powder, onion powder, paprika, cumin, chili powder, salt, and pepper. Add around 1/4 cup of water and mix to coat the chicken. Heat on low-medium heat until water is evaporated.

3. While the chicken is cooking, steam the tortillas using a paper towel in the microwave.

4. To each tortilla, add shredded cheese and chicken. Roll the tortilla and add to a baking dish that has been sprayed with oil.

5. Spray the finished taquitos with more oil and bake at 400 degrees for 20 minutes.

6. After 20 minutes, take the taquitos out of the oven and top with more cheese.

7. Serve with sour cream, guacamole, or pico de gallo.
