Creamy Peanut Chicken Curry Style

2 boneless, skinless chicken breasts, cut into cubes

1 tablespoon olive oil

Salt and pepper to taste

1 medium onion, chopped

2 cloves garlic, minced

1 tablespoon grated ginger

1 tablespoon curry powder

1 teaspoon ground cumin

1 cup coconut milk

3 tablespoons peanut butter

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon lime juice

¼ cup fresh cilantro, chopped

Fremgangsmåte

Heat olive oil in a large skillet over medium heat. Season chicken cubes with salt and pepper.

Cook chicken for 6-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, add onion, garlic, and ginger. Sauté for 3-4 minutes until softened and fragrant.

Sauté time: 4 minutes

Stir in curry powder and cumin, cooking for 1 more minute to release the flavors.

Spice time: 1 minute

Add coconut milk, peanut butter, soy sauce, honey, and lime juice to the skillet. Stir until the sauce is smooth and creamy.

Sauce prep time: 3 minutes

Return the cooked chicken to the skillet, and simmer in the sauce for 5 minutes, allowing the flavors to meld together.

Garnish with fresh cilantro before serving.
